I’m excited to tell you that I’ve introduced this incredible drink into the clinic. But what is it? Kombucha is fermented tea. It is a combined yeast and bacterial fermentation that results in a probiotic drink that is slightly tart (that’s the flavour of the beneficial acids and vinegars). Its also very low in sugars. Kombucha is a fantastic way to achieve a healthier gut, (particularly when used in combination with the gut transformation program) and a great alternative to alcohol. The large corked bottles open with a ‘pop’ and so is great for occasions where drinking alcohol isn’t preferred, or if you’re detoxing from the lockdown! You can buy it in two sizes. The 275ml costs £2.95 and the corked 750ml costs £7.95. There are two styles, Dry Dragon and Royal Flush.
The ‘Royal Flush’ is brewed from a First Flush Darjeeling tea. It is richly fragrant and creates a brew that is fresh and floral. Nothing is added, but the tea alone develops notes of rhubarb, white peach and a touch of blackcurrant. The fruit and spice flavours round out the acids to make it soft and delicate.
The Dry Dragon is light and citrusy with notes of sweet lemons and grapefruit, but with a delicate leafy undertone. Brewed from a Dragonwell Chinese green tea, it is dry and fresh – a perfect light summer spritz to be drunk at any time of day.
